Ingredients
Pie crust :
- 1 egg
- 2 ½ tbsp ice water
- 1 ½ cup flour
- ½ tsp salt
- 10 tbsp cubed margarine
Filling :
- ½ cup margarine
- 3 cloves garlic, chopped
- 1 small onion, chopped
- ½ cup sliced mushrooms
- 1 cup spinach (thawed, drained, and chopped)
- Salt and pepper, to taste
- ¾ cup feta or cottage cheese
- 1 cup cheddar cheese, grated
- 1 cup milk
- 1 egg
Method
Pie Crust :
- Mix an egg and ice water in a bowl and set aside.
- In a food processor, add flour and salt, then blend briefly.
- Add cubed margarine pieces and knead until a coarse dough is formed
- Add in egg-water mixture and continue kneading until a rough dough is formed
- Transfer the dough onto a lightly-floured surface to shape
- Mould the dough in a quiche pan/dish to form a pie crust then freeze them for 20-25 minutes.
Pie Filling :
- Melt margarine over medium heat, then sauté garlic and onion.
- Add in mushrooms and cook until slightly brown.
- Put in spinach and season with salt and pepper.
To prepare the Quiche :
- Spoon the filling into the pie crust.
- Add feta or cottage cheese and grated cheddar cheese.
- Pour in the mixture of an egg and milk.
- Bake for 45 minutes, until set in centre
- Allow to rest for 10 minutes before serving
