QUICHE

Ingredients

Pie crust :

  • 1 egg
  • 2 ½ tbsp ice water
  • 1 ½ cup flour
  • ½ tsp salt
  • 10 tbsp cubed margarine

Filling :

  • ½ cup margarine
  • 3 cloves garlic, chopped
  • 1 small onion, chopped
  • ½ cup sliced mushrooms
  • 1 cup spinach (thawed, drained, and chopped)
  • Salt and pepper, to taste
  • ¾ cup feta or cottage cheese
  • 1 cup cheddar cheese, grated
  • 1 cup milk
  • 1 egg

Method

Pie Crust :

  1. Mix an egg and ice water in a bowl and set aside.
  2. In a food processor, add flour and salt, then blend briefly.
  3. Add cubed margarine pieces and knead until a coarse dough is formed
  4. Add in egg-water mixture and continue kneading until a rough dough is formed
  5. Transfer the dough onto a lightly-floured surface to shape
  6. Mould the dough in a quiche pan/dish to form a pie crust then freeze them for 20-25 minutes.

Pie Filling :

  1. Melt margarine over medium heat, then sauté garlic and onion.
  2. Add in mushrooms and cook until slightly brown.
  3. Put in spinach and season with salt and pepper.

To prepare the Quiche :

  1. Spoon the filling into the pie crust.
  2. Add feta or cottage cheese and grated cheddar cheese.
  3. Pour in the mixture of an egg and milk.
  4. Bake for 45 minutes, until set in centre
  5. Allow to rest for 10 minutes before serving
