Quinoa Salad with Red Palm Oil Dressing


  • 100g red quinoa (steamed)
  • 40g Italian parsley (chopped)
  • 20g coriander (chopped)
  • 10g mint leaves (chopped)
  • 1pc red onion (small dice)
  • 40g Kalamata olives
  • 3 pc vine-ripened tomatoes (dice)
  • 40g cucumber (peeled, seeded and diced)
  • 1/2 tsp salt/pepper
  • 40 ml red palm oil
  • 30ml lemon juice
  • 1/2 tsp garlic (chopped)
  • 1/4 tsp Dijon mustard
  • 100ml red palm oil
  • 2 pc fried tortilla bread


  1. Steam the red quinoa until soft. Let it cool. Mix together in a bowl – parsley, coriander, mint, red onion, cucumber, olives, tomatoes, salt, and pepper. Mix well.
  2. Whisk together lemon juice, garlic, mustard and red palm oil until combined, then add to the salad. Mix well and serve with fried tortilla triangles.
