Quinoa Salad with Red Palm Oil Dressing

Ingredients

  • 100 g red quinoa (steamed)
  • 40 g Italian parsley (chopped)
  • 20 g coriander (chopped)
  • 10 g mint leaves (chopped)
  • 1 pc red onion (small dice)
  • 40 g Kalamata olives
  • 3 pc vine-ripened tomatoes (dice)
  • 40 g cucumber (peeled, seeded and diced)
  • ½ tsp salt/pepper
  • 40 ml red palm oil
  • 30 ml lemon juice
  • ½ tsp garlic (chopped)
  • ¼ tsp Dijon mustard
  • 100 ml red palm oil
  • 2 pc fried tortilla bread

Method

  1. Steam the red quinoa until soft. Let it cool. Mix together in a bowl – parsley, coriander, mint, red onion, cucumber, olives, tomatoes, salt, and pepper. Mix well.
  2. Whisk together lemon juice, garlic, mustard and red palm oil until combined, then add to the salad. Mix well and serve with fried tortilla triangles.
